LARGE BLUE peas are used for packet sales and export. Care and attention is required with their production and harvesting and improved plant types now make this crop suitable for the general farming rotation. Harvested peas should be of a deep uniform green colour with the minimum of physical defects. SMALL BLUE peas have a texture, colour and size that allows them to be canned as small processed peas. FABA BEANS for the export market should be of a uniform size with smooth, pale coloured skins that are sufficiently thin to allow the beans to be quickly rehydrated and cooked. They should also be free of bruchid beetle with production often focused on areas that are as free as possible from this pest. Beans must be carefully harvested to avoid cracking the seed coat.
