    MARROWFAT peas are used for packet sales, canning, processed peas and the fish and chip shop trade. Samples with a deep uniform green colour are used for packet sales and exports to the Middle East and Japan, while the paler samples are suitable for canning. New varieties recently available have helped to improve crop production and quality.

    LARGE BLUE peas are used for packet sales and export. Care and attention is required with their production and harvesting and improved plant types now make this crop suitable for the general farming rotation. Harvested peas should be of a deep uniform green colour with the minimum of physical defects.

    SMALL BLUE peas have a texture, colour and size that allows them to be canned as small processed peas.

    FABA BEANS for the export market should be of a uniform size with smooth, pale coloured skins that are sufficiently thin to allow the beans to be quickly rehydrated and cooked. They should also be free of bruchid beetle with production often focused on areas that are as free as possible from this pest. Beans must be carefully harvested to avoid cracking the seed coat.

    The DECORTICATING process removes skins from peas which are used for specialised food products. This process is also applied to Faba Beans.

    The SPLITTING of yellow and large blue peas produce a food ingredient used in canned soups and various culinary dishes. This splitting process is also applied to Faba Beans for the export trade.
